Fast And Easy Coffee Cake And A BIG FAT FLOP

You know how it is when you start out 
with high hopes for a quick little treat?
My daughter belongs to a MOPS
(Moms Of PreSchoolers) 
and even though she won't go to the 
meeting this week she needs to supply
a simple little coffee cake.
So, we hauled out the recipe book
and made a wonderful coffee cake.
Well....We THOUGHT it was going to be wonderful.
It was in a BUNDT PAN and SOMEONE me
failed to prepare the pan properly 
(didn't flour it after greasing it-duh)
So it came out kind of a FLOP.
HOW DO YOU CURE A FLOP?

Hmmmm.....maybe with some icing?
Ummmm...NOPE!  That didn't work....
EPIC FLOP!
Do YOU ever have FLOPS?
No?  Liar, Liar, Pants On Fire
It seems like everyone in Blogland is SO perfect.
Guess what?  All those PERFECT PEOPLE?
Yeah- Ummm.....That's not real.
REAL PEOPLE have REAL FLOPS sometimes.

So.-After OUR flop~ 
I used OUR because I like to share
the credit where I can~
it was back to the drawing board.
We I found a different recipe this time.
Ah-  A perfect recipe with few ingredients.
A good thing 
being as I had used all the "good stuff" on 
THE FLOP.
We I ditched the BUNDT PAN and used an 
8x8 pan this time
(GREASED AND FLOURED-
thanks for asking.)
SOOO much better!
Oh, yeah, baby....
AND speaking of baby...
notice how cleverly I worked the word 
BABY in there?

with a 2 year old, a 4 year old, 
a new baby and a C-Sectioned Mom!

Here's The EASY Coffee Cake Recipe...
SO GOOD!

Coffee Cake

1 1/4 cups all-purpose flour
1/2 cup sugar
1/4 cup sour cream
1/4 cup  butter + 2 teaspoons Cinnamon
1/3 cup milk
2    eggs
2 teaspoons baking powder
1/2 teaspoon salt
1 medium (1 cup) tart cooking apple, peeled, cored, chopped

Topping

1/3 cup all-purpose flour
1/3 cup firmly packed brown sugar
1/4 cup Butter  + 2 Tablespoons  Cinnamon
                                

Heat oven to 375°F. Combine all coffee cake ingredients except apple in bowl; stir just until moistened. Stir in apple.
Spread batter into greased and floured  8- or 9-inch square baking pan.
Combine 1/3 cup flour and brown sugar in bowl; cut in 1/4 cup  butter and cinnamon until mixture resembles coarse crumbs. Sprinkle over coffee cake batter. Bake 28-32 minutes or until toothpick inserted in center comes out clean. Cool completely.
